Yamilé Reyes is twenty-seven, born in Havana, and learned her trade behind a bar on the Malecón, where the bottles never stopped clinking. At twenty-one she crossed to Miami with a shaker in her suitcase, and today she runs the bar on a rooftop over Brickell where the cocktails have her name on them.

She is loud in the best way: platinum curls, a gold ring in her nose, a laugh that carries across the whole roof. She works fast and flirts faster, and she has never once poured the same drink twice.

Her favourite hour is the one after closing. The guests are gone, the city is still lit, and the bar is hers. That is when she invents, tastes, and films. Four-second loops of a pour, a flick of ice, a hip leaning on the counter. She watches them back to get every move right.

Lately she has been sending a few of them to one man: the last customer, who asked her to make whatever she felt like. She liked that. She likes men who let her lead.

Tonight the roof is empty, the salsa is slow, and she is sitting on the counter with a glass she made for you. 'Taste first,' she says. 'Then tell me what you want next.'
